Chocolate Sauerkraut Cake


It looks like chocolate, it tastes like chocolate, and he texture feels like the batter includes coconut…but April Fool, Inside the cake is SAUERKRAUT!


1 6oz. pkg. Semi-sweet chocolate bits


2 Cups unsifted flour


1 teaspoon Baking Soda


1 teaspoon soda


1/4 teaspoon salt1 cup sauerkraut (rinsed and drained)


1/2 cup butter (softened)


1 1/4 cup sugar


1 teaspoon Vanilla Extract


2 Eggs


3/4 cups water


Preheat oven to 350 degrees.


Melt Chocolate Bits over hot water - set aside


Combine flour, baking powder, soda & salt - set aside


Chop sauerkraut very fine - set aside


In a large bowl combine butter, sugar & vanilla & beat until creamy.


Add eggs one at a time beating well.


Add flour mixture with water.


Blend in with melted butter.


Fold in sauerkraut.


Pour batter unto 2 greased 8 inch cake pans


Bake at 350 degrees for 35 to 40 minutes.


Remove from oven and cool


Frosting


Melt chocolate over hot water 6oz pkg.


Remove from heat & add sour cream, vanilla & salt.


Gradually beat in powered sugar.
